Recipe preparation steps
Add rice to boiling salted water and cook according to package instructions.
Pat the turkey breast dry and cut into pieces.
Peel and finely dice the onions.
Wash the mushrooms, drain them, and let them dry. Slice them.
Heat the oil in a large saucepan. Brown the meat vigorously.
Add the onions and mushrooms and cook for about 4 minutes. Season with pepper.
Pour in the stock, bring to a boil, and cook for about 10 minutes.
Add the frozen peas to the meat.
Combine the cream and flour, stir into the ragout, and simmer for about 2 minutes.
Season with salt, pepper, and lemon juice.
Drain the rice in a sieve and let it drain well.
Arrange the turkey ragout and rice on plates.
Serve garnished with lemon slices and parsley.
Tip: If there are no children present, you can refine the sauce with a little white wine or white port.
