Low Carb Broccoli Pancakes with Yogurt
Ingredients - 9
Frozen Broccoli
Whole Chicken Eggs (M)
Shallot (Spring Onion)
Greek Natural Yogurt
Olive Oil
White Salt
Black Pepper
Ground Sweet Paprika
Recipe preparation steps
Allow the broccoli to thaw (if you are using fresh broccoli, cook it al dente first).
Place in a sieve, press gently and allow excess water to drain.
Chop the broccoli into small pieces.
Remove the skin from the shallot onion and chop finely.
Mix the eggs, onion, broccoli, paprika, nutmeg, salt and pepper well in bowls.
Heat some olive oil in the pan and fry the broccoli fritters on the pan.
Serve with yogurt.
