Gluten-free diets are gaining traction among the general population. Gluten-free products are increasingly available in stores, yet they are often consumed by individuals without medical necessity for gluten avoidance. Gluten comprises plant-based proteins, including gliadin and glutenin, whose adverse effects have been documented in specific conditions where an elimination diet is crucial for effective treatment.
Rules for a gluten-free diet
The gluten-free diet is an elimination diet, excluding products containing wheat, rye, barley and oats, which, despite being naturally gluten free, can be contaminated with other cereals in Polish conditions. To introduce oats into the diet, in Poland we can already buy this certified, glutenless diet, originating in Finland. The products that are naturally free of gluten are: corn, rice, potatoes, beans, onions, tapioca, amarantus, legumes, soybeans, bean sprouts, sago, sorghum, nuts, meat and vegetable products.
