Celiac disease is a lifelong autoimmune disease with a genetic basis, which can occur at any age. In Poland, the cause of the disease is gluten, which is the plant protein found in cereal grains. In particular, the individual components of the protein can be indicated: wheat gliadin, hordein in the tongue and secalin in life.
