The glycemic index (GI) serves as a quantitative measure of how rapidly a given food item elevates blood glucose concentrations relative to pure glucose, which is assigned a reference value of 100. Its determination involves monitoring blood glucose levels at fixed intervals over a 120-minute period following the ingestion of 50 grams of digestible carbohydrates (excluding dietary fiber). The area under the resulting glycemic response curve (AUC) is then compared to the AUC generated by an equivalent glucose load, yielding a percentage-based GI score. A low GI (<50) indicates gradual glucose release, whereas values exceeding 70 are classified as high. Multiple variables modulate the final GI, including the degree of food processing (with more processed items exhibiting higher GI values), as well as the presence of absorption-inhibiting components such as dietary fiber, phytates, proteins, lipids, and organic acids. A complementary metric is the glycemic load (GL), which integrates both carbohydrate quality (GI) and quantity per serving, calculated by multiplying the GI by the gram weight of carbohydrates in the portion and dividing by 100. GL values above 20 are deemed high and correspond to pronounced insulin secretion—a hormone critical for facilitating glucose uptake into cells. Chronic consumption of high-GI/GL foods may predispose individuals to metabolic disorders, including cardiovascular diseases, due to sustained hyperglycemia and hyperinsulinemia.
