Key Takeaways
In Mexico, individuals partake in morning meals in two distinct manners. A select group prefers a light snack immediately upon waking up, while the main breakfast is consumed a bit later (usually at 11:00 a.m.). However, others opt for one substantial morning meal between the hours of 7:00 a.m. and 10:00 a.m. The term Desayuno, or breakfast, can therefore refer to both a light, delicate croissant and to fatty, fried eggs.

The egg - a morning staple

This is a fundamental ingredient comprising breakfast meals served globally, including Mexico.

Eggs from the Hacienda

In literal translation, they are eggs from the hacienda. This delicacy has also gained popularity by being granted the status of a cure for the syndrome of the previous day. It refers to pan-fried eggs served with tortilla sauce. The sauce is made from tomatoes, onions, chili, cilantro, and lime juice. Avocado and cheese chunks are often added on top. There are also variations with lentils, ham, and beans.

Separated eggs

Separated eggs are an innovative variation of a farm-style breakfast dish. The name literally means "separated eggs". The difference lies in the fact that one egg rests on a red sauce bed, while the other rests on a green sauce bed. The green sauce is made with tomatoes, or green tomatoes. The eggs are usually served with a characteristic black bean paste.

It's a Mexican dish with eggs

Farmer's eggs are also served without tortillas, on a plate. This recipe resembles a Tunisian sausage. The egg is added to fried tomatoes, garlic, and onions. Red beans, corn, avocado, and peppers are often added. The whole is seasoned with cilantro, both ground seeds and fresh leaves. Of course, scrambled eggs and omelets are also popular. During preparation, ingredients such as mixed peppers, chili peppers, chorizo sausage, avocado, corn, beans, turmeric, cilantro, and cumin are often used.

Various, with a thickness of up to and including 10 millimeters

All of these dishes can be prepared using fresh plates, however, the plates from the previous day are frequently used.

"Chilaquiles" - a traditional Mexican dish

"Chilaquiles" is a dish consisting of fried portions of corn tortillas submerged in a tomato sauce. There are two variations of this dish: chilaquiles rojos, prepared with red tomato sauce, and chilaquiles verdes, made with green tomatoes. To prepare this dish, the tortillas are divided into smaller, triangular pieces and fried in fat. At the same time, onion, garlic, and tomatoes are separately fried in a pan. This salsa is then mixed with totopos, prepared tortilla pieces, queso fresco cheese, and cream. For the preparation of this dish, feta cheese can also be used. In many cases, chicken meat and fried egg are also added.

Fried quesadillas that are double tortillas filled with cheese, with optional fillings, predominantly meat and cheese, deep-fried in fat and served with sauce or cream

– two layers of tortilla filled with cheese. The filling of these flat pancakes is optional, with meat-and-cheese fillings being the most common. The quesadilla is deep-fried in fat and served with sauce or cream.

"Tacos" - a dish connected with Mexican cuisine

Despite tacos not being commonly linked to breakfast, they are small corn tortillas (occasionally wheat) that are amply filled with filling and then half-folded. Usual filling components include beef, garlic, onion, tomatoes, and spices such as oregano, basil, coriander, and chili. Furthermore, tacos often incorporate corn and red beans.

Roasted Baked Goods

Mexican people frequently take pleasure in early meals based on bread, which typically takes the form of toasts. These are known as molletes and are prepared using bolillo, a type of Mexican bread reminiscent of a baguette. A flat slice of bread is layered with fried beans and cheese, followed by heating the entirety until the cheese melts. Naturally, the addition of favorite ingredients to molletes such as ham, chorizo sauce, bacon, eggs or jalapeño pepper pieces is also possible.

This is sweet

As was previously mentioned, a significant number of Mexicans choose to partake in a smaller meal consisting of a small snack and a beverage prior to consuming a substantial, typically greasy breakfast meal.

This is Café de Olla - a traditional beverage

Café de Olla is a traditional beverage that is prepared in a clay or enameled pot. The name of this coffee literally means "pot candy". During its preparation, cinnamon sticks and unrefined cane sugar are used. After they are cooked, coarsely ground coffee beans are added and cooked for several more minutes under the lid. The beverage is then strained and served in smaller clay cups. Additional ingredients in Café de Olla may include anise, cloves, orange peel, chocolate, and sometimes milk or cream.

Coffee accompanied by condensed milk

Coffee with milk is the preferred choice of Mexicans, who willingly add a sweet taste to it and frequently opt for condensed milk as an ingredient.

Viscous cornmeal beverage

a thick, sweet concoction made from milk and cornmeal, served particularly during the winter season. It is typically seasoned with cinnamon, vanilla, or chocolate and has a texture similar to that of pudding. Variants prepared with rice (atole de arroz) and oats (atole de avena) also exist. It is often consumed as a warming beverage on cold days and is usually served with tamales.

Hot Mexican chocolate

– in the Mexican edition, it is much more intense and dense than the one known in Europe. Pan dulce – literally means sweet bread. It is the Mexican response to the sweet baked goods that have become known through European influences, especially French. Mexicans delight the rest of the world with their creativity and variety of pan dulce shapes. In this country, one can find hundreds of different types of sweet baked goods, which differ in shape, color, and addition. The most popular forms are: conchas (shells), orejas (ears), bigotes (mustaches), and besos (kisses). They are sprinkled with powdered sugar or coated with icing. This kind of baked goods can be bought on almost every street in a large city. They are also sold in the subway and at every tourist spot.

Tamales - a traditional Mexican dish

Tamales is one of the oldest known dishes in Mexican cuisine, dating back at least 8000 years. It is a stuffed cornmeal cake wrapped in corn leaves and cooked in pairs. In the past, the Aztecs and Maya filled it with turkey, iguana, or flamingo meat, while today it is most commonly filled with chicken, beef, pork, beans, or cheese. There are also sweet versions - traditionally with cheese, nuts, or raisins, but also with chocolate-nut cream. Fresh fruits or fruit juices such as pineapple, papaya, watermelon, banana, mango, and guava are also often used.

Breakfast in the open air

Street food forms an indispensable component of Mexican culture. Morning meals are also frequently consumed at local markets and stalls. This is also a budget-friendly alternative, which is highly favored by tourists who do not wish to overburden their wallets during their travels.

Sosy, Huaraches, and Memelys - traditional Mexican snacks

In Mexico, sosy and huaraches are popular, which are baked or fried cakes made from corn flour thicker than tortillas. They are prepared with various additives such as cheese, beans or lettuce. They are snacks consumed throughout the day, and their names indicate the shape of the cake. Sosy and memelys are round, while memelys are larger than sosy. Huaraches have an elongated shape. Memelitas are small tortillas stuffed with tomatoes, bell peppers, beans, and lettuce, which are baked. Huaraches are long and thick cookies made from cornmeal and ground, cooked beans. To this tortilla, meat, beans, cottage cheese, cheese, onions, chili peppers and other typical Mexican additives are added. Cola is often consumed as an accompaniment to the first meal of the day, even from childhood. Mexicans consume twice as much sweet carbonated beverages as Americans on average, which is a serious health problem in this country.

A Mexican-style breakfast from a nutritionist's perspective

Inspiration from various cultures of the world brings freshness to the kitchen. However, from a nutritionist's perspective, it is advisable to be cautious when introducing Mexican-style breakfast dishes into the daily menu. In this case, the dominant form of processing, which is often also in deep oil, is to be avoided. Sweet Mexican dishes are also a cause of a large number of samples, which are caused by the high sugar content and fat processing. However, it is worth noting that many spices have an antioxidant and anti-inflammatory effect, which is good for health. However, hot spices (such as the popular chili peppers in Mexico) are also irritating to the mucous membranes of the digestive tract and stimulate the production of digestive juices. Therefore, they are not recommended for people struggling with reflux, ulcers and inflammatory diseases of the stomach, esophagus and oral cavity. It is also worth noting that corn flour is widely used in Mexican cuisine. This is especially important for people who need to follow a gluten-free diet.
