Toxins in food and the environment: origins, health hazards, and mechanisms of action in the human body – a scientific evaluation based on the latest epidemiological and toxicological research
This article provides a comprehensive analysis of the most significant groups of natural and anthropogenic toxins that humans encounter daily, with particular emphasis on mycotoxins, heavy metals, and acrylamide. It examines their sources in food and the environment, toxicological mechanisms of action at the cellular and systemic levels, and potential health consequences—ranging from acute poisoning to chronic carcinogenic and neurodegenerative diseases. The paper also presents current epidemiological data on the exposure of the Polish population to these substances in the context of European Union food safety standards and World Health Organization recommendations.
