Nutritionally and physiologically active bioactive compounds and metabolites
Bioactive compounds encompass both essential nutritional components and non-nutritive substances that occur naturally in raw materials or are generated through technological processing (such as Maillard reaction products, including melanoidins), exerting a significant influence on the physiological and metabolic functions of the organism—whether by enhancing, diminishing, or altering these processes. Consequently, biologically active substances can be categorized as either beneficial or detrimental. Focusing specifically on the advantageous compounds that are naturally present in food products, these include: dietary fiber fractions with diverse functional properties, bioactive oligosaccharides (such as fructooligosaccharides and galactooligosaccharides), probiotic microorganisms and their prebiotic substrates, synbiotics combining both probiotic and prebiotic elements, polyhydric sugar alcohols (polyols), exogenous and endogenous amino acids along with their peptide derivatives, highly bioavailable complete proteins, polyunsaturated fatty acids from the omega-3, omega-6, and omega-9 families, vitamin complexes and trace minerals, phospholipids such as lecithin and choline, as well as a broad array of phytochemical compounds (including polyphenols, carotenoids, glucosinolates, and terpenes). This concept is closely linked to the definitions of functional foods and fortified foods. Functional foods are characterized by the presence of naturally occurring or deliberately added bioactive ingredients that demonstrate documented benefits for specific bodily functions—such as immune system support, glucose metabolism regulation, or cellular protection against oxidative damage. Fortified foods, on the other hand, undergo a process wherein bioactive compounds lost during processing are replenished, or substances not originally present in the raw material—or present only in trace amounts—are introduced. The examples below represent merely a segment of the extensive inventory of naturally occurring substances with established bioactive properties.
