While elevated temperatures are indispensable for developing desirable organoleptic characteristics, they can simultaneously trigger irreversible degradation of valuable nutrients, including heat-labile vitamins, omega-3 fatty acids, and phenolic compounds with antioxidant properties. The critical question thus arises: how can this thermal treatment be executed in an optimized manner to fully savor the richness of flavor without incurring unjustified losses of nutritional value?

What's a roast?

By definition, roasting is the exposure of a product to a high temperature, but below the melting temperature of the product. Usually, the process is carried out in a dry pan or in an oven, where the product is sprinkled on a layer of baking paper, e.g. sunflower seeds or pumpkin seeds. Under technological conditions the process usually takes place in three temperature variations: mild to 140 °C, strong to 150 °C to 200 °C and very strong to 300 °C.

Unfortunately, due to the fact that the process is carried out using a very high temperature in the raw material, there are a number of changes in the chemical structure, which, on the one hand, reduce the consistency and appearance of the product in valuable nutrients, which is an important aspect for the consumer. The seeds processed are delicately brittle, aromatic and slightly brown in color. Unfortunately because of the process carried out with the use of very high-temperature raw materials, a series of chemical changes occurs, which on the other hand reduce the texture and look of a product in precious nutrients and contribute to the improvement of the nutrition of other ingredients.

Proper roasting of the tips

To do the roasting process properly, we need to keep in mind a few important elements that will ensure that we get a healthy product without any unnecessary loss of nutritional value. We start with the proper heating of the pan or pot. This is a very important element because the better the pan is heated the shorter we will roast the seeds, and consequently we will lose less nutrients.

They are a great addition to salads, desserts, or commonly eaten as part of a sheep breakfast. They are also often added to natural yogurt or peas, pumpkin seeds, nuts or legumes, almonds, almond nuts, coconut livers, and many other elements of oily plants.
