Red cabbage salad with carrots and apples

Preparation steps

Chop the cabbage into very thin strips or finely chop it. Combine it with a pinch of salt and a little sugar, then set aside for about 10 minutes.

In the meantime, toast the pumpkin seeds in a dry pan. Wash the apples, cut them into quarters and remove the cores.

Clean and peel the carrots thoroughly.

Finely grate both the apples and the carrots, then add them to the cabbage.

Heat the apple juice and pour it over the prepared ingredients. In a separate bowl, mix the oil with the apple cider vinegar and honey, then pour the dressing over the salad. Season with salt and pepper to taste.

Crumble the feta cheese and sprinkle it over the salad.


Finally, add the toasted pumpkin seeds and serve.
